Early Summer Vegetables: Chard, Arugula, Zucchini, Parsley

With our parents in Italy for the summer we’ve been benefiting from their small, yet abundant, New Jersey garden and thus far have collected many early summer vegetables:  chard, arugula, zucchini, parsley, basil, mint, and zucchini flowers.  The chard and arugula make excellent fresh salads and we combine the zuchhini and zucchini flowers to make sublime frittelle di fiore di zucca .

    It all looks fantastic, Vince. I was an avid vegetable gardener back in Rome but our backyard here in the States is too shady… Sad!

      The photos in the article are via my parent’s NJ backyard (they don’t have much space but they certainly optimize well!). Our yard, like yours, has too much shade and beyond some small pots containing basil, parsley, and rosemary we don’t grow many fruits and vegetables!
