Ciabatta Role with Tomato, Basil, Extra Virgin Olive Oil, and Fillets of Anchovies

We have a love-hate relationship with our local Trader Joe’s.  That is to say, we love some of their value based products such as organic milk, eggs, Greek yogurt, cereals, peanut butter, nuts, select breads, etc., but don’t care much for their fruits, vegetables, frozen foods, and meats/fish.  And by value based, I mean product quality is good enough given price point.  One of the better products Trader Joe’s carries are house ciabatta roles.  The roles are of decent quality (and were ideal for our Ciabatta Role with Tomato, Basil, Extra Virgin Olive Oil, and Fillets of Anchovies sandwich) but they need to be heated up prior to consuming because their fairly tough and stale out of the bag.

Our sandwich included thickly sliced tomatoes from the garden, basil, Santisi Novello 2011 extra virgin olive oil from Sicilia, and Agostino Recca fillets of anchovies packed in olive oil with hot pepper.  The sandwich was ideal on a hot and humid day and the accompanying beer hit the spot
