3-5 pound whole chicken (buy the best chicken you can afford)

Parsley
Kosher Salt and freshly grounded black pepper
Process
Heat your oven to 425 degrees Fahrenheit and cover a whole 3-4 pound chicken chicken with liberal amounts of kosher salt and freshly ground black pepper.
Place the chicken in a cast iron or roasting pan (breast side up). If you have a lemon and parsley, stick half the lemon and some whole parsley in the cavity of the chicken. Place the chicken in the oven for 1 - 1.5 hours depending on the size of your bird and thereafter remove and let sit for 15 minutes.
That's it, you're done. You could add other herbs like thyme or rosemary or even crushed fennel seed.
