Cavatelli are about an inch to an inch and a half in length and are made from semolina, flour, and water.  Cavatelli usually have a rolled edge and are easy to make at home.  We paired our homemade cavatelli with brocolli, garlic, and extra virgin olive oil.  The Scordo Pasta Challenge chugs along!

  1. I love your website. It makes me feel good to be Italian.
BUT, you need to learn how to make appetizing photos of your food. The cavatellis look like a high school biology experiment or worse!!!

  2. Excellent looking dish Vince. Here in the DeGiorgio household,
pasta and broccoli is a big favorite no matter what the pasta shape!

  3. I have made this by hand as well as with a special cavatelli maker. But the real question is how do you pronounce the word cavatell? Some around here say “cavatell” leaving off the “i” sound.
