Tomato Bruschetta

The simple tomato bruschetta is my go-to dinner party appetizer because it’s easy to prepare and universally accepted as looking and tasting great. Our simply recipe includes:

Ingredients and Process:

  • Finely diced ripe tomatoes (Roma, Plum, or San Marzano varieties are best)
  • Finely diced red onion
  • Very good extra virgin olive oil
  • Kosher salt and freshly cracked black pepper
  • Dried oregano
  • Shredded basil.
In terms of the bread, we purchase good quality bread and slice it about 1/2 – 1 inch thick and toast it with olive oil, salt, pepper, dried oregano (you can also rub the toast with raw garlic after the toasting process).
Tomato bruschetta also makes a great light Sunday dinner along with a piece of cheese, salumi, and olives.  You can enjoy tomato brushetta with any wine but something light like a prosecco or rose works well or any classic aperitif.
