The typical American style coleslaw doesn’t excite me from an culinary perspective as the salad is often heavy on the mayonnaise and devoid of any real taste or texture.  We suggest you try the following Mediterranean Style Coleslaw variation for a tastier and healthier version of the American classic:

Mediterranean Style Coleslaw

Serves: 6-10
Ingredients
  • 1 organic cabbage
  • 1 golden delicious apple
  • 1 bunch of parsley
  • 1 red onion
  • 1 baby spinach (organic)
  • 4-5 sun dried tomatoes
  • ¼ cup of olive oil
  • ¼ red wine vinegar
  • Salt and Pepper to taste
  • 1 tablespoon mayonnaise
  • 1 dash of thyme
  • 1 dash of dried oregano
Process
  1. Shred the cabbage as thinly as possible with a large chef's knife and thereafter do the same with the apple and onion. In a large bowl add olive oil, mayonnaise, salt, pepper, oregano, thyme, and vinegar and whisk. Combine all ingredients and let sit in the refrigerator for about 1 hour prior to serving. NOTE: adjust salt if your sun dried tomatoes contain lots of salt.
